Have a “Souper” Day!

I wish I always had a pot of this simmering on the stove. It is seriously so good, I could eat it all the time. I made a huge pot over the weekend, for football Saturday, and just ate the last bowl for lunch today.


Sopa de Tortilla con Pollo (Chicken Tortilla Soup)

Optional toppings: Shredded cheese Red onion Cilantro Sour cream Avocado Tortilla strips (I like to fry my own corn tortillas, but you can use store bought chips if you like).


**This is a great make ahead recipe. In fact, I think it's even better leftover.


  • 3-10oz cans RoTel Diced Tomatoes w/green chilis (I use 1 original and 2 mild)
  • 2-16 oz cans Rosarita No-fat Refried Beans
  • 1 cup frozen corn
  • 1-48oz box Chicken Broth
  • 4 cups cooked chicken (I use meat from one rotisserie chicken)


  1. Combine undrained tomatoes, beans, corn & broth in large soup pot. Heat over med-high heat. Stir until combined. Bring to a boil. Add chicken. Simmer. Or, do like I did, dump all ingredients in large crock pot and cook all day.
