I rarely, as in hardly ever, eat pancakes for breakfast, but occasionally for dinner they just hit the spot. I wanted to make banana pancakes to use up some ripe bananas and this Pinterest inspired recipe was perfect.
I found the batter to be a bit thick, so I added a bit more milk. And, I didn’t have enough whole wheat flour, so I used 1 cup whole wheat and 1 cup white flour.
They were delicious, but a little too sweet with the Maple Glaze. Next time, I’ll serve them with just the butter and syrup.
