Tonights dinner was simple yet delicious!
Grilled teriyaki chicken• Grilled asparagus• Wedge Salad
This was obviously a “non-recipe” night. I simply marinated some chicken thighs in Veri Veri Teriyaki for a couple of hours, then BBQ’d. I seasoned the asparagus with some olive oil, salt & pepper, then grilled stovetop in my grill pan. When it was al-dente, I removed it from the heat, squeezed a good amount of fresh lemon juice on it and topped with lemon zest. I wanted to lighten up the wedge salad, so instead of using a creamy blue cheese dressing I chose to just drizzle w/olive oil and balsamic, then top with blue cheese crumbles, diced red onion and some freshly fried bacon crumbles.
